Vegetarian Stuffed Peppers With Rice Ingredients
6 colored peppers. Of the variety they are wider than long.
200g round rice
200g of minced meat (to your liking if you choose veal, pork, chicken or mixture)
4 cloves garlic
4 tablespoons chopped tomato
salt and pepper
Vegetarian Stuffed Peppers With Rice Recipe
1.- We cook the rice. We put twice as much water as rice in a casserole. We bring it to a boil and then we add a pinch of salt and rice. Let it cook until it absorbs all the water. Taking into account that they will go to the oven, it is better to stay a little harder than “al dente”
2.- While baking the rice, prepare the peppers. Cut the tips of the same and reserve. We’ll need it for later. Then we clean the interior of the pepper, eliminating all the white parts of the same, they are quite hard. We threw it out. We can do it with a knife or with the hands. Then we wash the peppers with water to remove the nuggets and other impurities
3.- We prepare the filling. Put on medium heat in a frying pan, a trickle of oil. Add the tips of the peppers, the onion and the garlic. All chopped good. Cook for about 5 minutes while stirring occasionally
4.- After time, add the minced meat. We crumble it with the spoon and mix it with the vegetable while we cook it for a couple of minutes. Let it catch color
5.- After time we add the tomato and some oregano. Remove and let cook 5 more minutes
- When everything is well cooked, remove the pan from the fire and add the rice that is already cooked. Mix with the rest of ingredients
7.- Finally we fill the peppers with this mixture of rice, meat and vegetables. We fill generously, crushing the filling a little to put all possible! That when the peppers are well filled! Once done, sprinkle with a little grated cheese and finally put them in the oven, previously heated to 200ºC. We leave them here for about 20 minutes
