For tastes are the colors but, with a good homemade salsa and a homemade mayonnaise, it’s like I’ve liked most of all I’ve tried (and I’ve tried a few). Ingredients For Spicy Potatoes For Four People:
4 small potatoes
Homemade Mayonnaise , to which we will have added a bit of saffron
1/2 medium onion
1 clove garlic
Cayenne pepper, chiles, to taste
One teaspoon dried oregano
A teaspoon of paprika
A spoonful of vinegar
300g of crushed tomatoes. Or two whole peeled tomatoes
1/2 cup of broth (as I always say, if you do not have broth, use broth and water)
salt and pepper
How To Make Spicy Potatoes:
1.- The first thing to make our spicy potatoes, is to cook the potato. So we put them in a big pot and covered them with a good handful of salt. We let them cook about 25 minutes. The best way to know if they are cooked, is to punch them with a knife. If the knife enters and leaves without difficulty, they will be cooked.
2 .- While the potatoes are cooked, we prepare our sauce . In another dish we put a trickle of olive oil and the finely chopped onion and garlic. Put the onion and garlic over low heat. After about 10 minutes, when cooked, add the tomato and vinegar and let cook 5 minutes more. Then we add the cayenne, chiles (what to throw and its quantity, depends on tastes and how hot we want the wild sauce) oregano. Then we put it in a beaker and beat everything with the blender. We’ll have a rather thick sauce. It is now when we add a broth that we have at home. And if you do not have then the usual trick. Tablet and water. Whatever it is but there are no excuses to prepare this delicious recipe !. We pour enough until we have a sauce with body but liquefied. Finally we put salt and we already have a wild sauce for our potatoes!

There are plenty of ways to prepare the potatoes . This is one of my favorites. If you do not want to add mayonnaise, you can only put the sauce. But for me, mayonnaise is indispensable in a few good potatoes. Anyway as I said at the beginning, about tastes there is nothing written so, I leave this to your choice.
