Brazilian Chicken Recipe Ingredients:
1 kg of chicken breast
1 kg of wheat flour
750 ml chicken broth
250 ml whole or skimmed milk
2 onions and a sprig of parsley
8 ripe tomatoes
200 gr. Of boneless olives
2 cloves garlic
2 eggs and breadcrumbs
Salt and oil
Preparation of chicken coxinhas
1- Cut the chicken breasts into small pieces.
2- Put the chopped breasts in a pan with hot oil.
3- When they are golden, add water to cover them. Let cook.
4- Remove the breasts, cut them even more, and add chopped olives and parsley. Spice and reserve.
5- To make the dough, sauté the onions (in pieces) with the garlic (chopped). When golden, add chopped tomatoes (and skinless) and seasoning. Add the chicken stock, the milk, and when the boil breaks, add the flour (little by little) and stir until a dough is formed that comes off the bottom of the pot. Allow to cool.
6- When the dough is cold, make small croquettes, add some filling, close them and give way to chicken muslitos.
7- Pass the muslitos for the beaten egg, then for the breadcrumbs, and fry them in abundant hot oil, until they are golden.
8- Remove the muslitos from the oil and deposit them in absorbent paper. You can accompany the muslitos with a light salad.
